Pistachio Pesto {Paleo}

Ditch the pine nuts and find even more flavor with pistachio pesto! This pesto is made without cheese and you definitely don't miss it.

Ingredients
  

  • 3 cups fresh basil leaves
  • cup shelled pistachios
  • 2 cloves garlic
  • 1 tsp sea salt
  • ½ cup extra-virgin olive oil
  • ½ lemon, juiced

Instructions
 

  • In a food processor, pulse basil, lemon, garlic, salt and a little olive oil until smooth.
  • Add the pistachios and the rest of the EVOO and pulse until the mixture reaches a good pest consistency.
  • Add EVOO until you find your desired pesto consistency.
