I have always loved pesto and when I started gardening, basil was the first thing I planted because I wanted to have fresh pesto whenever I wanted. While pesto is typically made with pine nuts, my pesto is made with pistachios which, in my opinion, gives way more flavor!
I also omit the traditional parmesan cheese to make it paleo and you seriously do not miss it!! For this pesto you’ll need a food processor, fresh basil, pistachio, garlic, lemon juice, extra virgin olive oil and salt.
If your pistachios are already salted, you can omit the salt! You could also add in some nutritional yeast if you really love that “cheesy” flavor in your pesto. I love adding my pesto to some chicken and fresh tomatoes but it’s also perfect on pasta, topping your salad, or on a pizza! I hope you enjoy!
Pistachio Pesto {Paleo}
Ingredients
- 3 cups fresh basil leaves
- ⅓ cup shelled pistachios
- 2 cloves garlic
- 1 tsp sea salt
- ½ cup extra-virgin olive oil
- ½ lemon, juiced
Instructions
- In a food processor, pulse basil, lemon, garlic, salt and a little olive oil until smooth.
- Add the pistachios and the rest of the EVOO and pulse until the mixture reaches a good pest consistency.
- Add EVOO until you find your desired pesto consistency.
