Spaghetti Squash: Back to Basics Recipe

When I first starting cooking, it was the most basic cooking tasks that would stump me for far too long. I remember the first time I bought a spaghetti squash I ended up searching the internets for far too long to try and figure out how to cook it. Everyone has their own tips and tricks and ways of doing it but once you do it for yourself enough, you learn what you prefer.

For me, that means I want a fully cooked squash. I’m not a big fan of al dente squash, I prefer it to be soft, and that is exactly what this recipe does for ya! So if you’re like me, give it a shot. I love serving spaghetti squash with meat balls and marinara but I also love it in a stir fry or a pesto dish. I have even added it to soups and it is lovely. The possibilities are truly endless.

To start, you are going to want to cut your squash in half and clean out the seeds with a spoon. Then you can drizzle some oil over top, rub it in and sprinkle with salt and pepper.

Once your oven is preheated, just flip these bad boys over and throw them in the over for 35-40 minutes. You’ll know it’s done when you can easily push a fork through the skin of the squash. You can also flip it over and see if you can run a fork through it, choice is yours!

Once it cools down, run a fork through that baby and enjoy!

How To Cook a Spaghetti Squash

Ingredients
  

  • 1 medium sized spaghetti squash
  • 2 tbsp avocado or extra virgin olive oil
  • Salt & pepper

Instructions
 

  • Preheat oven 400ºF
  • Cut spaghetti squash in half and scoop out the seeds in the middle
  • Drizzle both sides of squash with oil and rub in with hands
  • Sprinkle salt and pepper over the squash, you don't need much!
  • Flip squash over, cut side down on baking sheet and place in preheated oven for 35-40 minutes. You will know when the squash is done when you can easily stick a fork through the skin
  • Allow squash to cool slightly then use a fork to scoop out the squash and enjoy!
