I never grew up eating bok choy and I really wish I had. Baby bok choy is one of the easiest things to cook up, and it is full of flavor and nutrients! Combining the bok choy with mushrooms just takes it up to another level, and a big bonus is that it’s done in under 10 minutes!
To make the recipe, chop up your bok choy into 1 inch pieces and slice your mushrooms. You can use baby Bella or shiitake, they both taste great! You’ll want to combine the bone broth, fish sauce, and sesame oil and set aside. Next up, cook your garlic until fragrant, add in your mushrooms for one minute, then add in your bok choy and coconut aminos and stir fry for about 3 minutes. You’ll add in your broth mixture and continue to stir fry for about four minutes until the sauce is slightly reduced then serve it up with some fresh green onions.

Stir-Fry Baby Bok Choy and Mushrooms
Ingredients
- ½ lb shitake or baby bella mushrooms, stems removed and caps sliced
- 1 lb baby bok choy, stems cut off, leaves separated, cut into 1 inch pieces
- 2 green onions
- 1 garlic cloves, minced
- 2 tbsp coconut aminos
- ⅓ cup chicken bone broth
- 1½ tbsp fish sauce
- ½ tsp sesame oil
- 1½ tbsp coconut or avocado oil
Instructions
- In a small bowl, mix together the chicken broth, fish sauce, and sesame oil. Set aside.
- Over high heat melt cooking fat in a large skillet or wok.
- Once very hot cook garlic for 10 seconds, stirring so it is mixed with the cooking fat.
- Add mushrooms and stir-fry for about 1 minute.
- Now add the bok choy and coconut aminos and stir-fry for another 3 minutes.
- Next stir in the chicken stock mixture and continue to stir-fry for another 4 minutes, until sauce is slightly reduced but the bok choy are still bright green.
- Remove from the heat, transfer to a serving bowl and top with green onions and service warm. Enjoy!
